Muslim Chicken (Thai Stir Fry)
Mix together the sauce in a bowl or gallon zip lock bag:
6 Tbl creamy peanut butter
4 Tbl soy sauce
4 Tbl lime juice
2 Tbl brown sugar
1-2 tsp fresh grated ginger
1 tsp red pepper flakes
1/4 cup warm water
(Don't panic if it looks like baby poo at this stage. I promise everything will be all right!)
Heat 1 generous Tbl of oil in a large non-stick skillet. Add 1 1/2 lbs boneless, skinless chicken breast cut into bite size pieces. When cooked about half way through, add 6 oz fresh or frozen snow peas (pods), 3 chopped scallions and 2 cloves of finely minced garlic. Cook until pea pods are barely tender. Add the sauce from above and cook 2 minutes longer to melt everything together. Serve over rice, soba noodles (or even thin spaghetti) sprinkling with chopped peanuts and cilantro.
