Bite-size Snowball Macaroons

1 1/4 cup sugar divided
1/4 tsp salt
4 egg whites
1/2 cup all-purpose flour
2 1/2 cups flaked coconut
1/2 tsp vanilla extract

Preheat oven to 325F.

In a medium bowl, combine 1/4 cup sugar, flour and salt. Stir in coconut. Set aside. In another bowl, beat egg whites until soft peaks form, then add vanilla. Gradually add remaining sugar and continue to beat until mixture is very stiff. Gently fold coconut mixture into egg white mixture. Drop by 1/2 teaspoonful onto lightly greased baking sheet. Bake 9-11 minutes or until bottoms are lightly browned. Transfer to wire rack to cool. Store in airtight container. Makes about 10 dozen.
