Salsa Fresca
Chop into 1/2 inch cubes:
3-4 large tomatoes
1 large onion
1 medium jalapeno (roasted, skinned and seeded)
1/3 cup chopped cilantro
salt and lime juice to taste
Stir together in large bowl. Let sit for at least an hour to blend flavors.
