3/4 cup each thinly sliced celery, carrot and onion
1 Tbl margarine or vegetable oil
4 12 oz cans of white beans
1 cup (+/-) diced ham or sausage
1 12 oz can of diced tomatoes with jalapenos
Water
Saute vegetables in margarine until soft. Add beans (including juice) and ham. Stir until mixed. Add tomatoes and enough water to achieve soup consistency. Stir occasionally until heated through. Add salt and pepper to taste.
