Grandma Clarke's Peanut Butter Cookies

Mix thoroughly:
1/2 cup softened shortening
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg

Sift together and then stir into butter/sugar mixture:
1 1/4 cups sifted flour
1/2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt

Chill dough. Roll into balls the size of a large walnut. Place 3-inches apart on a lightly greased cookie sheet. Flatten with a fork dipped in flour, crisscrossing. Sprinkle with a small amount of granulated sugar. Bake at 375F for 10-12 minutes, until set but not hard.
