2 yellow cake mixes
2 cubes melted margarine
2 eggs
2 Tbl water
1 cup shredded sweetened coconut
3/4 cup white chocolate chips
3/4 cup semi-sweet or milk chocolate chips
Preheat oven to 350F. Mix the cake mix, margarine, eggs and water together to form a dough. Thoroughly mix in coconut. Drop by generous teaspoonsful onto a greased cookie sheet and bake for 8-10 minutes or just until starting to turn golden. Cool on rack. Melt white chocolate in a small bowl in the microwave (stir every few seconds so as not to overheat) until it drizzles off the tip of a spoon. Melt chocolate in another small bowl in the microwave. Drizzle on top of cookies with white chocolate, then dark chocolate. Let sit in a cool place until the chocolate sets. Store airtight. Makes approximately 4 dozen.

Grandma Clarke's Peanut Butter Cookies
Mix thoroughly:
1/2 cup softened shortening
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
Sift together and then stir into butter/sugar mixture:
1 1/4 cups sifted flour
1/2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
Chill dough. Roll into balls the size of a large walnut. Place 3-inches apart on a lightly greased cookie sheet. Flatten with a fork dipped in flour, crisscrossing. Sprinkle with a small amount of granulated sugar. Bake at 375F for 10-12 minutes, until set but not hard.

Homemade Oreo Cookies

Place on a lightly greased cookie sheet and flatten each cookie with the bottom of a drinking glass dipped in water (or a cookie stamp would be pretty). Bake 8 minutes. Let cool for 1 minute on the pan then transfer to wire racks. Frost back of one cookie then place another cookie on top backside toward the frosting to form a sandwich.
Frosting:

1 1/2 tsp vanilla
a few Tbl of cold milk (as needed)
Beat on high, thinning as needed to achieve spreadability with the milk.

1 cup brown sugar

2 cups oatmeal
1 tsp vanilla
14 oz pkg of chocolate chips (optional)
Blend shortening and sugars. Add eggs and beat until fluffy. Add dry ingredients and mix well. Add oatmeal vanilla and chocolate chips and mix. Form into balls and roll in sugar. Bake at 350F for 12 minutes. Makes 3-4 dozen depending on size.

29 vanilla wafers, finely crushed
1 1/2 cups powdered sugar
1 cup walnuts or pecans, finely chopped
1/2 of 6 oz can orange juice concentrate, melted
Mix all ingredients together. It will be moist but quite stiff and smell heavenly. Form into small balls. Roll each in shredded sweetened coconut and place on waxed paper on a cookie sheet until set. Store airtight in the fridge.
