Chicken & Broccoli Cheddar Rice Casserole

In a large casserole dish, layer the following:
2 Tbl olive oil
1 1/2 cups long grain rice (I like white basmatti)
1 cup frozen chopped broccoli
3/4 cup grated sharp cheddar cheese
1 can cream of chicken soup mixed with 1 cup milk
1 1/2 - 2 cups warm water
4 chicken breast halves

Bake covered at 350F for about 45 minutes. Remove cover, sprinkle with additional grated cheese and return to oven for 5 minutes to melt cheese.
