Salt and pepper 4 thin chicken breasts (1/2 breasts, slightly pounded work best) and bake until cooked through at 350F. Remove from oven and spread lightly with barbeque sauce. Sprinkle each with crumbled up cooked bacon, shredded mozzarella cheese, 1/2 slice of swiss cheese, and finely chopped onion. Return to oven until cheese is melted and bubbly.
Serve with steamed baby carrots and parsleyed mashed potatoes.
